The CIA Top Table Restaurant is operated by students of the Culinary Institute of America taking their Bachelor of Business Administration in Food Business Management where they acquire hands-on experience working in the front and back of the house from August to mid-November. A Contemporary Italian Menu is typically served from August till the end of September, and from October to mid-November, a Formal French Dining experience is offered.
